STICKY DATE PUDDING
1 1/4 cups chopped dates
1 1/4 cups water
1 teaspoon bicarbonate of soda
60g butter
3/4 cup casater sugar
2 eggs 1 cup self-raising flour
PUDDING:
Grease deep 19cm square cake pan, line base with baking paper. Combine dates and water in pan, bring to boil, remove from heat, add soda; stand 5 minutes. Blend or process date mixture until smooth.
Beat butter and sugar in small bowl with electric mixer until combined; beat in eggs 1 at a time; beat until combined. Gently whisk in sifted four prepared pan. Bake in moderate oven about 50 minutes.
Stand cake 10 minutes before turning into wire rack. Serve cake warm with butterscotch sauce.
BUTTERSCOTCH SAUCE:
1 1/2 cups firmly packed brown sugar
250g unsalted butter, chopped
300 ml thickened cream
Combine all ingredients in pan, sitir over heat, without boiling, ultil sugar is disolved. Simmer, stirring, 5 minutes.
Not suitable to microwave.
